HELLOO!!!!


My name is Fionna and I'm so very new to the whole blogging scene. I'm not even sure where to begin. Well iced is intended to be all about cupcakes. About how I started on this adventure called baking! Whether it be various recipes, pictures, experiments, or anything cupcakes! These little bits of heaven deserve all the attention they can get! So to start us out I must tell you about the batch of ginger molasses cupcakes topped with a cinnamon cream cheese frosting that I made just recently. They are one of my new favorites, and one of my newest trials. I've been trying out as many new recipes as I can get my hands on lately. My family is loving and hating me. Loving because of all the delicious cupcakes, and hating because of all the delicious cupcakes! Anyways back to the ginger molasses cupcakes. my only comment on them would be that the cupcake itself when cooled, were a little dense for my liking. But the frosting was to die for! So here's the recipes. Unfortunately I can't remember where I got these two recipes but next time I will certainly give credit where credit is due.

Ginger molasses cupcakes

2/3 cup molasses
1/2 cup sugar
1/2 cup shortening
2 teaspoons ground ginger
1 teaspoon cinnamon
1 teaspoon baking soda
2 cups flour
1 cup sour milk
2 eggs beaten

-preheat oven at 350 degrees.
-heat molasses, sugar, shortening, ginger, and cinnamon to a boil, stirring constantly. Then let cool until lukewarm.
-sift the flour and baking soda into a large bowl. Then add the cooked mixture alternately with the sour milk. Lastly, add the eggs and mix until smooth.
-line cupcakes tins with paper liners and fill with batter.
-bake 20 minutes
-let cool before icing

Cinnamon cream cheese icing

8oz. cream cheese
1 teaspoon cinnamon
3 1/2 cups of icing sugar
1/2 cup butter
1 teaspoon Vanilla extract

-mix cream cheese and butter until smooth. Add vanilla and cinnamon. Then slowly add icing sugar, one cup at a time. Mix until all incorporated and smooth.
